I enjoy cooking with a Dutch oven, whether it be over a campfire or a camp stove. There is an art to cooking in a Dutch oven. Once you get the hang of it you can cook or bake anything that can be cooked or baked in your modern kitchen at home.
I have baked rolls, cake and even pizza in a Dutch oven. One dish meals such as stews and soups are the best when made in a Dutch oven. Meat, even the cheapest cuts can be made tender and delicious in a Dutch oven.

There are a few tricks concerning the cooking source that are important to successful Dutch oven cooking. They can make the difference between undercooked or burnt food.
When I am preparing a meat dish such as ribs, chicken or roast, I like to brown the meat in the Dutch oven on a camp stove. Then the flavor from the browned meat is in the Dutch oven and adds to the taste of the finished product. Also this gets the Dutch oven hot so when it is placed on the coals, they maintain the heat and energy isn't lost trying to heat the Dutch oven up.

The heat for Dutch oven cooking can't be too hot or too cool. To take a line from the three bears, it must be, "just right." This might seem hard to determine, but if you are using charcoal briquettes it as easy as counting the number best ovens of briquettes to put under and on top of the Dutch oven.

Put as many briquettes under the Dutch oven as it size and two more than that number on the lid. That will give you a temperature of 350 degrees. For example if you are using a size 12 Dutch oven put 12 bricketts under the Dutch oven and 14 on the lid. If you are baking anything I recommend using bricketts.

If you are using a campfire you need to burn the wood down to coals and use the coals to heat the Dutch oven. I like to keep a campfire burning to replace coals as needed. Usually ever 30 to 40 minutes. This requires you to make a place outside of the campfire to place your coals for the Dutch oven. If you don't do this and leave the Dutch oven in the fire pit with the fire burning you will probably end up with the food burned on the side closest to the fire.

I usually use a fire pan of some kind, the lid of a metal garbage can works great, to put the coals in. That makes for easy clean up of the ashes and you don't have coals and ashes scattered all over your campsite.

Cooking with wood coals requires some skill learned by experience to determine the proper temperature for the food you are cooking. There are different types of wood that make better coals than others. Usually we don't have the luxury of having the best wood available every time and just use what is available. So it takes a little more watching to make sure the dish you are preparing gets properly done. I don't worry about this too much when cooking meats and stews. This may be more of a problem when baking products such as cakes and rolls. The correct and consistent temperature is more important when baking so the item doesn't burn or become under cooked. Doughy rolls or soggy cake is a real disappointment after all the work you go through to make them.

You can also just use a camp stove and not have a fire or coals at all. This works great with one dish meals and dishes with a lot of moisture in them. A camp stove doesn't work that great for baked items though because there isn't any heat on the lid.
The best thing to do is just try it find Dutch oven recipe that looks good. They are on the internet or in special Dutch oven cookbooks. Follow the instructions and you will have a great meal that tastes better than anything you have ever cooked before. Especially if you cook it while camping in the mountains.

  1. As another review mentioned, these are NOT the highly rated mitts I was expecting from Flameguard. In less than a year they were useless.

    These oven mitts are great… can bake a lasagna, and not be forced to drop it due to burning my hands as I take it out of the oven! I was not thrilled when I opened the box and saw twice as many oven mitts as I ordered (I ordered 4, 2 for me, and 2 for a cousin), as this page did not indicate the price was for a pair, not single mitts. However, 2 more people got to get a pair of oven mitts as (inexpensive) gifts! These were recommended as a best buy on America’s Test Kitchen.

  3. I believe the company named this product Flameguard to defraud people looking for the Flameguard oven mitt that was the best buy recommendation by Cook’s Illustrated. The name of the oven mitt is Best Guard. The maker is Crew Ware. I have no idea whether performance is the same. But SHAME ON Next Day Gourmet for using a name that does not represent the actual product and for intentionally keeping the description vague to get people like me to spend my money. BUYER BEWARE.

  4. I also received double the mitts I wanted, because the price is for a pair. At this price, though, it’s not really worth it to return them.

    This purchase was to replace a similar pair that I loved, but have worn out. The mitt I replaced had a silver hem, similar to one mitt shown in the product photos, but the 15″ I purchased did not. Overall, the new mitt seems slightly less well constructed compared to my 10-year-old pair – the “quilting” is larger, and the fit is not quite as tapered as the previous pair. However, the material and thickness are identical. And the price is certainly right!

    I spoke with customer service regarding the extra pair, and they answered the phone quickly and were very polite. My only other complaint is that it took so long to receive the mitts that I’d forgotten I’d ordered them!

  6. I would not recommend this toaster oven.

    I, too, had an old, little B&D toaster oven that worked a charm. It was small and efficient and did a great job of toasting, broiling and generally heating things up.

    We replaced our toaster oven with what I thought was the updated version of our older model when we started having electrical problems with the old one. I knew I didn’t want a modern, mega-toaster oven, many of which take ages just to heat themselves up, much less the food.

    I have been pretty disappointed in this model.

    The most aggravating parts of the model are the controls. The upper control allows you to select a range from Warm to 400/450, and then Toast, and then Broil. It’s a little knob that twists around and doesn’t have any ‘notches’ in it, so it’s easy to miss the Toast setting. Stupid.

    Then the other problem, the one everyone else is complaining about, is the lower control. It is a timer that allows you to choose, in increasing order, Light, Medium, Dark, 10, 20, 30, etc. I don’t know who ever uses it for any real length of time. I generally use the 10 minute or less setting and I stay there. If you don’t watch the food, it will burn very quickly. The fire hazard that everyone keeps discussing is that if you set it for a very low setting, the timer knob will get close to the end but won’t ever ‘Ding!’ and therefore will just stay on without ticking down the minutes any more. Not cool.

    And, if you turn the damn thing off a little too eagerly in a fit of frustration, you can turn the small knob just a little too far past OFF to ALWAYS ON. Um, who needs an toaster oven with an ‘Always on’ option when 10 minutes burns everything? I have walked away from the thing on more than one occasion only to discover that I turned it ‘Always on’ rather than ‘Off’. How reassuring.

    This toaster oven is also incapable of making toast, which doesn’t really bother me as I use it more like an oven than a toaster, but it may be important to you. I think the problem is the controls plus the different distances between the food and the heating elements.

    Additionally, the door can be a little tricky. The door has a hinge that automatically pulls the rack out a little ways, and it’s poorly designed, so it can stick when opening or closing.

    So, this little guy is not the little guy they were selling in the 80s and 90s. It’s an “improved” piece of crap and I look forward to replacing mine soon.

  7. We wanted a toaster oven that was small similar to the one we received as a wedding gift years ago. This model seemed to be close in size and features. What a disappointment! The knob to set the timer is really difficult for the kids to turn. If you don’t stand there and watch your item being toasted, good chance it will be burnt! The kids hate this toaster oven and I am not pleased with its performance either. It heats up food okay and cooks small items fine. We should probably get a regular toaster for the kids so I don’t have to babysit the toaster oven every time we toast something! This toaster oven redefines light,medium, and dark. We just set it to light everytime so our bread and poptarts don’t turn black!

    I had my previous version of this toaster for more than 15 years and loved it. When I replaced it with the shinny new version I had immediate difficulties with the toast function. There was a fire inside the oven and even with the door opened and the timer forced to the off position the heater element kept burning extremely high heat. It is defective. It’s not that the setting was wrong or the timing was wrong or that there was grease or crumbs burning-none of that. It’s the heating elements themselves or wiring or something that is very dangerous. If I had not been standing nearby there would no doubt have been a house fire. This product should be immediately recalled. I gave it one star because the review won’t go through with out a rating. If I could give it a skull and cross bones it would be more appropriate. Please take care.

    This replaced a previous model that was aproximately 20 years old and was used almost daily. The heating elements finally gave out (by arcing). So for twenty bucks or a dollar a year I wanted another one. What can I say; it works well for the simple tasks I ask of it. The older model had a timer you set separately and then started by pushing a sliding lever down. This has a combination timer that you have to reset every time. I liked the older system better, otherwise I would rate it 5 stars.

  10. I received this thing as a ‘house warming’ gift. How ironic.

    My smoke alarm just went off, and thank god it did. I was making toast inside this thing, got distracted, and it didn’t shut off.

    The whole condo was filled with smoke and the toast was literally on fire. I have never seen toast as black as my heart until tonight, and I’m pissed.

    I pray that no one has their life destroyed by one of these things.

  11. I picked up this toaster oven at a local store for $62 and some change. Only for occasional toasting and the bigger reason was to cook small meals, frozen pizza and reheat foods that just don’t do well in a microwave. Black and Decker was always the standard by which everyone based their products on. Guess B&D have falling into hard times in the competition of costs vs quality, this model is very poor quality! I usually get a kick out of reviews where most people seem to like a product then you get a few people who talk about “how horrible it is” and now you are reading this review wondering the same thing? “How can there be mostly reasonable reviews and this guy isn’t happy?”

    With the first use of cooking a frozen 12″ pizza (which fit nicely by the way) the racks refuse to stay in the guides and kept crashing to the bottom!!! Needless to say, burned pizza made a mess everywhere! I’m going to give B&D benefit of doubt in that possibly I had a defective model? However, I just couldn’t bring myself to exchange it for another! Instead, spent a little more ($69 so not much more) money on an Oster convection model that has great guides and though the convection is purely a fan blowing hot air around, it really seems to work well!

    No more B&D products for me, that may seem harsh but I don’t have time or the patience to return products in hopes the next one will work…

  12. Don’t quite understand why so many people are having problems with this unit. It doesn’t take a rocket scientist to “toast” something. If you are scared of burning your bread, then put it on the lowest setting. If you need more time, add more time after that. What I love about it, is that when my air conditioner is on, I cook everything in here because I won’t turn on the big oven. Just this week I made the most delicious breaded pork chops, french fries, chocolate chip muffins, all kinds of cookies WITHOUT any problems. The timer seems to be dead on, but I use a digital timer at the same time anyway just in case. Have had this unit for maybe a year now. Bought it from BJ’s and never regretted it for a moment. Love that you can also put a “round” pizza in the rectangular oven due to the bump in the back. Perfect for my family!!! Happy cooking all…………..
